Poor Man's Fish Croquettes

Fresh fish
1 medium sweet onion, chopped
1 medium sweet pepper (optional), chopped
1 or 2 whole eggs
1 cup self-rising cornmeal (adjust to amount of fish)
1 cup self-rising flour (also adjust to amount of fish)
Milk, enough to make mixture medium thin
Salt and black pepper, to taste
Onion or garlic salt, other spices optional, to taste

This recipe is ideal for using bony fish, such as pickerel or carp, or varieties of fish that might not be suitable for preparing other ways.
Cut fish into pieces, cover with a small amount of water and boil until flaky. Remove from heat and let cool. Remove bones and skin and crumble fish well.
Mix other ingredients, then add crumbled fish. Heat shortening in a skillet over medium-high heat. Use a large spoon to dip the batter and ease it into the skillet. Fry until deep golden brown.
If you like, use onion or garlic salt or other seasonings to taste, but be careful not to destroy the flavor of the fish. In fact, you may substitute many other items as you please.
